Windows 2008? Windows 7? Best windows host?

I started off with a Linux host running Vmware Server 2, but managing everything via SSH and adding drives, etc... not fun.  So tried out windows as a host and was surprised to find my VMs running at least twice as fast and clearly managing the windows host is a breeze compared to Linux. 

 

The only draw back IMHO is the resources that windows uses

 

With that said, what 64BIT Windows OS is best and how do you streamline it down to its bare necessities?  I'm using server 2008 right now and its a hog.  I was thinking about putting windows 7 on as a host, but wanted to get some feedback and hopefully start a flame to really get some solid answers and experiences on this.

 

Don't bring up XP or Linux, not going to either of those places.  I presume we can all agree Vista is the OS that shall not be named. 

 

I also have been looking at http://www.vlite.net/ and i hear you can create a basic W7 install.
